Ingredients
    For the Chicken Thighs
  • 4 bone-in, skin-on chicken thighs

  • 1 tbsp lime juice (freshly squeezed)

Instructions
  1. Prepare the Chicken Thighs
    1. Marinate the Chicken:
      • In a small bowl, mix honey, lime juice, lime zest, smoked paprika, cayenne pepper, garlic powder, salt, and black pepper.
      • Rub the marinade all over the chicken thighs, ensuring they are evenly coated. Let marinate for at least 15 minutes, or up to 1 hour for more flavor.
    2. Cook the Chicken:
      • Preheat a large skillet over medium-high heat and add the olive oil.

      • In a medium bowl, gently toss diced avocado, cherry tomatoes, red onion, cilantro, and lime juice. Season with salt and black pepper to taste.
