  • 2 cups sweet potatoes (peeled and diced)

  • 1 tsp ground cinnamon (optional)

  • Fresh thyme or parsley for garnish (optional)
Instructions
  1. Sweet Potatoes
    • Preheat oven to 400°F (200°C).
    • In a bowl, toss diced sweet potatoes with olive oil, salt, pepper, and cinnamon if using.
    • Spread evenly on a baking sheet and roast for 25-30 minutes, flipping halfway through, until golden and tender.
  2. Maple Glaze
    • In a small bowl, whisk together maple syrup, soy sauce, Dijon mustard, minced garlic, and olive oil. Set aside.
  3. Salmon
    • Season salmon fillets with salt and pepper.
