Ingredients
    Garlic Lime Shrimp
  • 1/2 lb large shrimp, peeled and deveined (tails on or off)
  • 2 tbsp olive oil
  • 1 and Zest juice of lime
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder
  • Salt and black pepper, to taste
  • Avocado Salsa
  • 1 ripe avocado, diced
  • 1/2 cup cherry tomatoes, quartered
  • 1/4 small red onion, finely diced
  • 1 tbsp fresh cilantro, chopped
  • 1/2 of Juice lime
  • Salt and black pepper, to taste
  • Garnish
  • Lime wedges
  • Fresh cilantro
Instructions
  1. Marinate the Shrimp
    • In a medium bowl, combine olive oil, lime zest, lime juice, garlic, smoked paprika, chili powder, salt, and pepper.
    • Add the shrimp to the marinade, toss to coat, and let it rest for 15-20 minutes in the refrigerator.
  2. Grill the Shrimp
    • Preheat a grill or grill pan over medium-high heat.
    • Thread the shrimp onto skewers (if using wooden skewers, soak them in water for 10 minutes to prevent burning).
    • Grill the shrimp for 2-3 minutes per side, or until they turn pink and opaque.
  3. Serve
